For this recipe, you need a special tool that gives the pumpkin this spaghetti shape. It is called a spiralizer, and can be purchased in many places, such as stores that specialize in gastronomy.

Ingredients:

  • 1/2 small pumpkin (900 g)
  • 1/2 cup mushroom (50 g)
  • 4 cloves garlic
  • 1 tbsp pepper (15 g)
  • 2 tablespoons salt (30 g)
  • 1/2 tbsp oregano (8 g)
  • 1 tbsp olive oil (15 g)

Approach:

  1. First,  peel, wash and divide the pumpkin in half.
  2. Use the spiralizer to shape the pumpkin into spaghetti.
  3. Saute the pumpkin spirals and mushrooms in a pan over medium heat. This will take  around 10 minutes.
  4. Add the ingredients one by one and stir well to mix the flavors.
  5. Finally, take it off the heat, cool it down and enjoy your delicious spaghetti pumpkin dish. You can add some parmesan cheese if you like.

2. Pumpkin salad

If you do not like to eat heavy dishes in the evening, a salad is the best option for you. This recipe uses not only the pumpkin as the main ingredient, but also as a dressing.

  • 1/2 pumpkin (900 g)
  • 1 avocado
  • 1 broccoli without stalks
  • 1/2 onion
  • 1/4 cup goat cheese (50 g)
  • 3 tablespoons olive oil (45 g)
  • 1 cup vegetable broth (250 ml)
  • 2 glasses of water (400 ml)

Approach:

  1. Peel, wash and cut the pumpkin into cubes. Use a little over half for the dressing, and the rest for the salad.
  2. Bring to a boil over low heat with the vegetable broth and oil. When it starts to boil, turn off the heat, let it cool down, strain and put the pumpkin in a blender with a little water so it gets a creamy consistency.
  3. Then cut the onion into julienne strips, the broccoli into small pieces and the avocado into pieces. Put the ingredients in a bowl with the previously divided pieces of pumpkin.
  4. Mix the ingredients well and add the goat cheese.
  5. Finally, have the pumpkin cream dressing over the salad and enjoy.

Creamy pumpkin soup

  • 1/2 glass skim milk (100 ml)
  • 2 tablespoons cornmeal (30 g)
  • 1/2 leek
  • 2 tablespoons salt (30 g)

  • 1/2 tablespoon coriander (for garnish) (8 g)
  • 1/2 glass of water (100 ml)

Approach:

  1. Peel, cut and wash the pumpkin well. The pieces can be medium in size.
  2. Put the pumpkin, water and milk in a saucepan and cook.
  3. When the pumpkin starts to soften, take it off the plate, cool down and pour off some of the water.
  4. Then put it in the blender. To get a creamy consistency, use some of the same liquid it boiled in.
  5. Finally,  serve and garnish with cilantro. Enjoy a light and delicious creamy pumpkin soup.
