A classic recipe with pumpkin and spaghetti

As you know, most pumpkin recipes are a rich pumpkin soup. This vegetable is usually served mashed or as a puree.

It can also be used to make a sauce that is suitable for other types of food. And that’s really what we’re going to do with this recipe.

In this classic recipe with pumpkin and spaghetti, use the pumpkin to make a sauce for the pasta. We suggest using spaghetti here, but you can also use another type that you prefer, or noodles.

What is interesting is how the color combination mixes and becomes very delicate.

Ingredients

  • Spaghetti (300 g)
  • 1 large onion
  • 3 cups pre-peeled pumpkin (600 g)
  • 1 cup cream (250 ml)
  • 2 tablespoons olive oil (30ml)
  • 2 tablespoons nutmeg (30 g)
  • 1 tbsp salt (15 g)
  • 1 tablespoon ground black pepper (15 g)
  • 2 cups parmesan cheese (optional) (200 g)

Approach

  • Add a little olive oil to a frying pan and fry the onion. Do it on medium heat with a little salt.
  • Add the pumpkin (without seeds). Cook together until soft.
  • From time to time you stir a little so that it becomes an even mass with the same consistency.
  • Now it’s time to cook the pasta. Fill a large saucepan with water, salt and a little oil. Let it boil.
  • Finally, add the cream to the pan and stir it in with the cheese. When the pasta is done, pour off the water and mix it into the pumpkin mixture with the other ingredients and let it simmer for two minutes.

Pumpkin and spaghetti with mushrooms

This variant of the original is almost simpler than the first. If you have a little extra time, you can also add a little pesto and chicken fillet. Anyway, if you make it with pumpkin and mushrooms then you get an unbeatable and very nutritious recipe.

Ingredients

  • 200g spaghetti
  • 3 chicken fillets
  • 2 cups sliced ​​pumpkin (400 g)
  • 1/2 cup mushroom (100 g)
  • 2 broccoli bouquets
  • 1 large onion
  • 2 garlic cloves, chopped
  • 2 tablespoons extra virgin olive oil (30 ml)
  • 1 tbsp salt (15 g)
  • 1/4 cup white wine (62 ml)

Approach

  • Start by steaming broccoli and pumpkin
  • Take a frying pan where you brown the onion and garlic.
  • Add the mushrooms when the onion is golden. Mix everything for a minute. Do not forget to add salt.
  • Meanwhile, place the chicken on a rack or in a frying pan and fry them. When they are cooked through, cut them up and put them together with the onion and mushrooms.
