1. Valencian Paella

Valencian paella

This is the queen of paella, and one of the most famous Spanish dishes in the world. People are often confused when it comes to  “Valencian paella”, because there are so many types of rice.

Traditional Valencian Paella – the one you see in the paella recipe below – contains rabbit, chicken and beans. It differs from shellfish or mixed paella, which contains both shellfish and chicken.

Ingredients 4-6 servings

  • 2 cups rice (400 g)
  • 1/2 pepper (30 g)
  • Salt and pepper, to taste
  • 4 cups chicken broth (1 l)
  • 1 medium tomato (60 g)
  • 1 small sprig of rosemary
  • Extra virgin olive oil
  • 1/2 kg chicken, cut into pieces
  • 1/2 kg rabbit, cut into pieces
  • 1 handful of green beans (80 g)
  • 1/2 cup white beans (100 g)
  • 1 teaspoon paprika powder (5 g)
  • A small pinch of saffron (you can replace it with yellow food coloring, but this is not recommended)

Preparation

  1. Fry the chicken pieces and the rabbit in a paella pan (a large deep pan) with olive oil.
  2. When the meat is lightly browned on all sides, add the green beans and stir for a few minutes.  Make sure they do not sting.
  3. Cut the tomato into small pieces and put it together with the white beans. Then add the paprika powder and mix well. Bake it for a few minutes.
  4. Then add chicken broth, saffron, rosemary, salt, pepper and increase the heat.
  5. While it is boiling, add the rice and let it rest. You can salt to taste.
  6. Cut the paprika into strips and place it on top.
  7. When the water has almost completely evaporated, lower the heat. Afterwards, cover with a lid or aluminum foil and let it cook for 10 minutes.
  8. If the grains are soft, turn off the heat and let them rest for 10 minutes, then serve. Do you see? Making paella can be very easy.
Paella with shellfish

Ingredients for 4 people

  • 2 cloves garlic
  • 1 onion (60 g)
  • 1/2 kg akkar
  • 1/2 kg fresh shrimp
  • 1 medium tomato (60 g)
  • 1/2 pepper (30 g)
  • 2 cups rice (400 g)
  • 4 cups fish broth (1 l)
  • 1/2 cup peas (100 g)
  • 1 sprig fresh parsley
  • Olive oil, salt and pepper to taste
  • Yellow food coloring or a little saffron
  • 1 handful of mussels, mussels and mussels (150 g)

Preparation

  1. Start by cleaning and peeling the shrimp. Be sure to save on the shells and heads of the broth.
  2. Clean the field well and cut it into rings. Wash the shells with plenty of water to get all the sand out.
  3. Add olive oil in a large frying pan. Fry peppers, tomatoes and onions, and sprinkle with salt and pepper.
  4. Add the acorns and sea shells. Cook for a few minutes until it begins to rise.
  5. Pour in two cups of rice and mix well. Then add four cups of the previously prepared shrimp broth. You can add some water to it.
  6. While it is boiling, add a teaspoon of yellow food coloring or saffron and let it cook for 3 minutes.
  7. Add fresh peas, shrimp and chopped parsley while still liquid in the pan. Add salt and pepper to taste.
  8. When the liquid has almost dried out, add some strips of paprika and shrimp with shells for decoration.
  9. Lower the heat, cover and cook for 15 minutes until the rice grains are soft. Pour over a little olive oil and serve.
