Ingredients (for 3 to 4 people)

  • The juice of half a lemon
  • 1 teaspoon of salt (5 grams)
  • 1/4 cup warm water (50 ml)
  • 2 tablespoons of tahini (30 grams)
  • 2 cloves garlic
  • Olive oil (required amount)
  • 2.5 cups of boiled chickpeas (500 grams)
  • 1 teaspoon of ground cumin (5 grams)
  • 2 tablespoons olive oil (30 ml)
  • Topped with chopped parsley or paprika powder
  • Optional spices: Caraway and coriander

Preparation of hummus with chickpeas

  1. The first thing you need to do is put the boiled chickpeas in a bowl filled with hot water. It is important that the water completely covers them. Leave the chickpeas in the water for at least one hour so that the shell falls off.
  2. After this you can start making the hummus. To do this, strain the chickpeas to separate them from the peel that comes off, and pour out almost all the water (save some of it).
  3. Then crush the chickpeas with a hand mixer. Crush the garlic cloves well.
  4. Squeeze the juice of half a lemon and add this to the chickpeas (do not use one too large lemon).

  • 1 pinch of salt
  • 2 tablespoons of sesame seeds (30 grams)
  • 1 tablespoon of water (15 grams)
  • 1 tablespoon with olive oil (15 ml)

Preparation

  1. Clean the sesame seeds with water. It is very important to dry them well afterwards.
  2. If they are not toasted, shake them in a frying pan over high heat. (You need to shake the seeds to get a more intense taste). 
  3. Put the seeds in a bowl. Then add the olive oil, water, and a pinch of salt and mash it. Repeat the procedure until the seeds become a smooth paste.

It is worth mentioning that the secret behind this recipe is the olive oil. The less you spend, the better. To keep the hummus fresh, you need to store it in the refrigerator (for up to 3 days). As it does not contain any preservatives, it will become bad after this.

You can make it stronger by adding 2 to 3 tablespoons of chili powder or cayenne pepper. Some even add a pinch of black pepper to enhance the taste. However, this completely depends on your taste and the results you want.
